Description

Makes 4 servings (2-3 medium-sized pancakes each)

Ingredients

1 Vanilla Ensure COMPLETE shake, 10 fl oz
1 cup buttermilk pancake mix
2 tbsp oil

Instructions

Combine pancake mix and Vanilla Ensure COMPLETE in a mixing bowl and stir until combined. Batter may be slightly lumpy. Allow batter to rest for 2 minutes.
Warm a large skillet over medium heat and add oil to skillet.
For each pancake, pour ¼ cup of batter onto hot, lightly-greased skillet. Once bubbles begin to appear on edges and underside of pancake begins to brown, flip pancake, about 3 minutes
Cook until golden brown, an additional 3 to5 minutes and remove from heat. Serve warm. Immediately refrigerate remaining servings and consume or discard after 24 hours. Reheat as needed.
